Looking for the perfect showstopper for your celebration supper? This Orange Blossom Gammon is the answer! The sticky, sweet glaze made with Cape Coastal Orange Blossom Honey and mustard creates a delicious contrast with the savoury gammon. It's rich, flavourful, and perfect for holiday feasts!
Ingredients:
- 2½ kg boneless unsmoked gammon joint (tied)
- 1 onion, halved
- 2 carrots, chopped
- 1 celery stick, chopped
- 1 tbsp black peppercorns
- 1 tsp cloves
For the glaze:
- 1 1/2 tbsp English mustard
- 70g Cape Coastal Orange Blossom Honey
- 2 tbsp dark brown sugar
Method:
- Place the gammon in a large saucepan with onion, carrots, celery, peppercorns, and cloves. Cover with cold water, bring to the boil, then simmer for 1 hr 15 mins. Let sit for 30 mins off the heat.
- Remove the gammon, peel off the skin, and score the fat in a criss-cross pattern.
- Preheat oven to 200°C (180°C fan). Place gammon in a roasting tray lined with foil. Mix mustard, honey, and sugar, and brush half over the gammon. Roast for 15 mins, then add the remaining glaze and roast for another 20-30 mins until sticky and caramelised.
- Let cool for 15 mins before slicing and serving. Garnish with orange slices and a drizzle of more Cape Coastal Orange Blossom Honey for extra flavour!
