Ingredients:
- 2 cups popcorn kernels
- 1 tbsp oil
- 1 apple
For the caramel:
- 1/2 cup soft brown sugar
- 1/2 cup Cape Coastal Creamed Honey
- 5 x 1/2 tbsp butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking soda
Method:
- Pop your kernels in a pot with 1 tbsp of oil until they burst into popcorn.
- In a saucepan, melt brown sugar, honey, salt, vanilla, and butter. Boil for 3-5 minutes until it thickens and deepens in colour.
- Remove from heat and carefully stir in baking soda (it will foam up!).
- Pour the caramel over the popcorn and chopped apple, gently mixing to coat.
- Spread on a baking tray to cool and harden.
